Aaron & Stephanie

We went to Aaron and Stephanie's WeddingBQ tonight. We had a good time and got to meet the parents and some co-workers.

More wedding receptions should have grilled corn on the cob.

Jake's Secret Roasted Corn on the Grill Recipie:

Please use farmstand corn, not the crap from the grocery store. If you don't live near a farm stand, move out of the city.

1. Soak corn, in husk, in ice cold water for an hour (you may even want to put ice in the water).

2. Pull back husks, but don't take them off, and remove silk.

3. Apply olive oil, then rub on a pinch of salt, a pinch of pepper, and a pinch of nutmeg. That's right, nutmeg. Also, only use a pinch. You can add more salt and pepper later to taste, if you want to (but you probably won't need to.).

4. Re-cover corn with husks until you have the corn covered by two layers of husks. Your oily hands will be an asset to make the husk stick to the corn nicely.

5. Tear off and discard any additional pieces of husk, but keep one long piece to tie the top of the corn, to keep it from opening while roasting.

6. Roast over medium heat for 15 minutes, then flip and roast for another 15 minutes.(if using charcoal, use indirect heat). NO ALUMINUM FOIL The husk will protect the corn, although a few kernels may get dark.

7. When the husk is all charred, you are definitely done.

8. Remove husk and enjoy. (Some people may add butter and more salt. This is ok, but may not be necessary.)

Sounds good, I will have to try that next time we make corn. If we do I'll post it.

About the corn at stores and markets: the problem with corn at the store is that it is generally picked too ripe after alot of the sugar in the kernels have switched to starch. This makes the corn taste not as good.

Stores get the same corn as markets do, but the people at markets probably only sale corn that will actually be good while stores just sell all the corn.

If you want to make sure that the corn that you are buying is good to eat as sweet corn pop one of the kernels that is in the middle of the ear with your finger nail, let the liquid dry on you nail. If it dries to be white the corn has alot of starch in it and won't taste good. If it dries and it is clear and slightly sticky then the corn has alot or sugar in it and will taste good.

Another thing to look for is if any of the kernels have indentions in them. This means that the ear of corn was picked after the corn plant started to dry itself out, that corn will not taste good.

Geez, I'll repost this as another full post, the public must know this info!
